Selection of grapes and juices
Thanks to very propitious climatic conditions and exceptional sunshine, our winegrowers have long time applied the principles of environmentally friendly viticulture. This is how the Mediterranean region has become a pioneer in the development of sustainable agriculture and organic viticulture. All the wineries we work with today produce organically certified grapes. This is as much a personal choice as a matter of taste: organic winegrowers are also those who pay the most attention and care to their vines.
During our tastings in each appellation, carried out throughout the year and especially during harvest, we identify the best wines, those we like as they are, but above all those that will be able to contribute something to our future blend. We source our supplies from cooperative wineries, from newly established winegrowers, and also from the most renowned estates. In some places, we buy grapes, but also finished wines, after fermentation, which we bring back to our cellar to control their aging.
Wine blending
For each appellation, we gather all the pre-selected samples, then we build our blend. Each blend usually consists of five to ten distinct origins. From one vintage to the next, our blends remain true to our interpretation of an appellation while highlighting the particular successes of certain areas or a specific grape variety.
The purpose of blending is to reveal the complementarity of each lot and to understand what they bring to each other.
Wine Maturation
Aeging Particular care is given to ageing, which we consider to be the core of our work. This explains why we select our wines as early as possible and bring them together in our own cellar. We do not have any recipe for the ageing and we adapt our choices taking into account the vintage, the appellation and the grapes, with the aim to show drinkable wines shortly after their bottling. For barrel ageing, we always favor large containers, especially demi-muids, for gentler oxygenation, better suited to our Mediterranean grape varieties.
