Most of our selections come from the dry area of Les Mourels and Les Coteaux which extends from Caunes to Aignes, where the wines on slopes grow hand in hand along with the garrigue on sandstone soils, less sensitive to dryness. In the western village of Caunes, Syrah are planted on cooler places which take advantage of the first oceanic influences. Growing on limestone clay soils, Syrah is able to withstand to a dry year thanks to the clayey subsoil water retention capacity. Our Minervois expresses the sun-filled and spicy personality of the Mediterranean Syrah in harmony with the old Grenache softness from Pépieux vineyards and the intense Carignan.
Maturing
30 % tank
20 % demi muids (new and one year old wood)
20 % barrels of 225L (new and one year old wood)
30 % barrels of 400L (one and two years old wood)
Tasting
Onctuous and sensual, Minervois reveals intense berry fruit flavors. Dominated by the rich and peppery Syrah, this wine is exceptionally soft with silky fruitiness coming from the Grenache.
